Stir-fried Pork

Stir-fried pork tenderloin with Red Pepper, Shiitake Mushrooms, Baby Bok Choy, Green Scallions and Peanuts.

Schnitzel & Potato Salad

For lunch I prepared Wonton Soup

I had a leftover of tapered end of Pork Tenderloin when I cut up 4 of them for freezing so I just flattened it and shallow fried it as a Pork Schnitzel. I served it with Potato Salad that I made couple of days ago.

Potato Salad and Schnitzel

I made potato Salad few days ago and all I had to do is add extra potato, gherkins and celery. I used pork tenderloin for Schnitzels, as usual. Served with gherkins and beer, of course.
