Spaghettini with Shrimp

Simple and fast to make meal: Saluted mushrooms and shrimps, cream sauce and Spaghettini.

Egg Drop Chicken Soup

I love the light texture of Egg Drop Chicken Soup. I have added fresh Enoki mushrooms for more and different texture.

Frittata

This is a true comfort food: sliced boiled potatoes, caramelized onions, eggs and topped with cheese.

Sunday, March 25, 2018

Chicken Wings

For this version I used Chinese Sauce similar to Char Siu that is used for roasted pork.

Pizza

I make only one kind of pizza: thin and crispy crust and vegetarian. The toppings are always the same as well. Red Pepper, Zucchini, Red or White Onions and mushrooms.

Beef Ball Soup

This is a substantial soup that makes nice lunch. I used Chinese wheat noodles, Bok Choy and Beef Balls.

Spinach Lasagna

This Spinach Lasagna has same filling and sauce as Cannelloni but is not as tedious to make and pasta is more substantial.

Potstickers

Obviously, we like Potstickers. This time served with Green Beans and Red Pepper.

Monday, March 19, 2018

Stir-fried Pork

Stir-fried pork tenderloin with Red Pepper, Shiitake Mushrooms, Baby Bok Choy, Green Scallions and Peanuts.

Sunday, March 18, 2018

Pork Schnitzel

This time I used Pork Tenderloin slices for Schnitzel; super tender and very quick to cook.

Spaghettini with Salmon

For this meal I use Salmon Portion that is just right for two meals. Sauce is 1/2 a cup of White Wine reduced to teaspoon and 1/3 cup of heavy Cream. Thinly sliced Cremini mushrooms would make this even better.

Pork with Noodles and Mushrooms

Very fast meal. I used Pork Tenderloin, Cremini Mushrooms, White Wine and 35% Cream.

Eggdrop Soup

This is such a delicate and easy to make soup. Toasted Sesame Oil gives it a nice Oriental touch.

Saturday, March 3, 2018

Potstickers

Potstickers have same pork mixture as Wontons and Pearl Balls, are covered in same skin as Wontons but are folded differently and are fried crisp on one side and then steamed in same frying pan.

Scrambled Eggs

For Scrambled Eggs I like to start with lightly caramelizing green onions in lot of butter and beat the eggs just to combine the yolk with whites. Remove to plate when all the whites are almost set.

Steamed Pearl Balls

Pearls balls are just like Won Tons where soaked glutinous rice replaces Wonton skins and are steamed rather than boiled.

Thursday, March 1, 2018

Won Tons with Sauce

Love this snack! I usually make enough Won Tons to fill a baking sheet for the freezer so when I feel for some Won Tons I just take few and drop them frozen into soup or just plain water.

Shrimp Spaghettini

One of the simplest and very satisfying meals I can think of with just few ingredients:
Spaghettini, Medium shrimps, cream, seasonings and Parmigiana cheese. In Summer it is great at room temperature with toasted baguette slices rubbed with garlic.

Cod with Fermented Black Beans

I used dry cod that takes a bit of work to prepare but the taste and texture is what makes it so great. The fermented black beans give it nice taste and roasted baby bok choy together with red peppers lend it nice crunch.

Chinese Style Pork Ribs

Sweet and sticky sauce, fall-off-the-bone pork spare ribs, glass of beer...Enough said. 😏

Saturday, February 24, 2018

Tofu with Mushrooms

I am NOT a vegetarian but this was pretty good; Shiitake mushrooms, bok choy, red pepper and tofu with Hoisin and Oyster based sauce and Sriracha, of course.

Friday, February 23, 2018

Potsticker with Lettuce

We love Potstickers! I use store bought skins but the meat mixture is made from scratch. The texture of crispy bottom and chewy top is what is so good. I do use a lot of Sriracha in my dipping sauce.

Pork Burger with Potatoes

In Czech it is called Karbanatek and is very popular food for picnics eaten at room temperature. The patty contains about 30% bread crumbs, egg and seasonings (black pepper, Hungarian paprika, salt, parsley, garlic. Also, ha burger is coated in egg wash and bread crumbs just like a Schnitzel.

Chicken Chow Mein

Another version but this time with right wheat noodles. Other ingredients are the same:
chicken thighs, white onions, Shiitake mushrooms, red pepper and broccoli.

Spaghetti Carbonara

What I have read this dish wasn't mentioned anywhere till 1945. Theory goes that it was created for American GIs that landed in Sicily. It was supposed to be sort of typical American breakfast of bacon, eggs and toast; very feasible. The pasta replaced the toast. I preheat my eggs before they are folded into hot pasta.

Roasted Pork Ribs

Ribs are every carnivore's favorite food, I think. These were the ends so had a lot of cartilage. Just loved it!

Friday, February 16, 2018

Chicken Chow Mein

This was a great meal even though I didn't have a right noodles. The soft chicken thighs, slippery soft shiitake mushrooms, crispy broccoli and crunchy peanuts; what more can you ask?

Thursday, February 15, 2018

Salmon Fillet & Beans

Crispy skin salmon is my favorite way to cook this fish. The problem is that supermarkets do not properly scale the fish and scaling small fillet is a real pain in the but.

Chicken with Bok Choi

It doesn't look particularly pretty but it was so good! Roasted peanuts gave it a nice texture.

Roast Pork, Dumplings & Saurkraut

Typical Czech meal that is usually served on Sunday. We can have it any day of the week.

Sunday, February 11, 2018

Pork Ball & Tofu Soup

Just a quick snack using what I had on hand. I just love convenience of Chicken Stock in carton. I always buy Salt-Free.

Haddock with Potatoes and Tartar Sauce

Lemon and Chopped Parsley give it nice touch.

Bok Choi and Potstickers

Bok Choi and Potstickers cooked in same frying pan makes this one pot dish.

Beef Ball Soup

Beef Balls, Cabbage, Noodles and Chives make this soup a comfy food.

Beef & Broccoli

One of my favorite stir fries, Stir Fried Beef and Broccoli, is very fast to make once the ingredients are cut up and sauce prepared. I have added slivers of Red Pepper because I had it and for bit of color.

Beef Ball Soup

My Go-To soup. I buy Beef Balls from M&M Market when they are on special and is only boxed ingredient that I use in my cooking, pretty much everything else I make from scratch.
This version had a thin noodles and shredded cabbage.

Japanese Omelet

Dashimaki Tamago is Japanese Omelet made in special rectangular pan where mixture of eggs and Dashi is cooked in very thin layer and when set rolled, pushed back and more mixture is added. Very delicate.

Sunday, February 4, 2018

Pizza

Vegetarian Pizza, the only kind I make despite me being dedicated and hard core carnivore. Besides sauce I use just 4 ingredients; Red Onion, Zucchini, Red Pepper and Cremini Mushrooms.

Schnitzel & Potato Salad

For lunch I prepared Wonton Soup
I had a leftover of tapered end of Pork Tenderloin when I cut up 4 of them for freezing so I just flattened it and shallow fried it as a Pork Schnitzel. I served it with Potato Salad that I made couple of days ago.

Wonton Soup

My very own hand made wontons in home made chicken stock.

Saturday, February 3, 2018

Pork Spare Ribs

The ribs are cooked first in Instant Pot for 35 minutes, instead of baked in oven for 2 hours, glazed with nice sticky sauce and finished in toaster oven under broil for 5 minutes.

Friday, February 2, 2018

Chicken Wings

Baked Chicken Wings with Hoisin based glaze and served with Coleslaw.

Thursday, February 1, 2018

Italian Sausage

Another comfort food; Italian Sausage with crisp potatoes, Maple Syrup Beans and Tomatoes. It is not as heavy as it looks and takes about half an hour to prepare.
